Breakfast is most definitely my favourite meal of the day. Sometimes the idea of a delicious brekkie is one of the best motivations to get out of bed and take on the day! This 5-minute muesli is not only delicious but is packed with nutrients to start your day off with the perfect bite! (Oh, and did I mention it is super easy to prepare).

Ingredients:

  • 1 Tablespoon Canola oil
  • 2 cups oats
  • 1 Teaspoon Cinnamon
  • 1/2 Teaspoon Turmeric
  • 1 Teaspoon Vanilla essence
  • Pinch of salt
  • 1/2 cup Dates, chopped
  • 1/2 cup Almonds
  • 1/4 cup Goji berries
  • 1/4 cup raisins

Method:

  1. Heat the oil in a large sauté pan
  2. Add the oats and mix well, making sure that all the oats are covered with the oil
  3. Add the dates, almonds, vanilla essence, cinnamon, turmeric, and salt and mix well.
  4. Continue cooking for a few minutes until golden brown and toasty
  5. Add the goji berries and raisins and mix well
  6. Allow to cool for a few minutes and enjoy with some fresh fruit and yogurt
  7. Place the leftover muesli in an air proof container
